
What is 3-Ply/Tri-Ply, 5-Ply and 7-Ply Stainless Steel Cookware?
The 3-Ply/Tri-Ply, 5-Ply and 7-Ply Stainless Steel Cookware are considered Clad Stainless Steel Cookware. Cladding is the bonding of different metals together to increase the function of the cookware. Whether to increase heat conductivity or to improve overall thermal diffusivity.
The 3-Ply's/Tri-Ply's is the most common type of cladding with stainless steel on the outside and inside with an aluminum core giving the piece its weight and energy conductivity.
The number of ply's refers to the bottom of the cookware that comes in contact with your stovetop. 7-Ply Sets have 2 more layers than 5-Ply Sets. Those 2 layers are:
Carbon Steel
Extra Layer of 304 Surgical Stainless Steel. The carbon steel layer gives the 7-ply set better heat distribution and will keep food hotter longer while using less energy to cook the food. The 7-Ply Set works best with "Induction Stoves" due to the carbon steel layer though the 5-Ply Set will work with induction stoves as well. The cost to manufacture the 7-ply cookware is higher.
